Getting the shell off hard boiled eggs... any tips?

I have heard of 2 tips... Use eggs that are not less than 2 weeks old, and boil them with some vinegar added.

I don't think either of those ideas work well. They haven't for me. I need 19 eggs to make a dozen good looking deviled eggs....

Any tips?
 
As soon as you take them out of the boiling water, run them under cold water & after about 30 seconds, start peeling still under the cold running water. Works well for me. If they were hard boiled & refrigerated, I don't know, don't care for those.
 
You need to use eggs that are older than a week -- the older the better!

The way that works best for me is, I put them in a pot of cold water with the water coming about an inch over them. I bring the pot to a rolling boil, then turn it off, put a lid on and let it sit on the burner for 17 minutes. As soon as they're done, I dunk them in freezing ice water immediately and let them sit until they're cold all the way through.

I put the hard boiled egg under running water. The shell is easily removed.
 
I agree with the cold water bath after cooking. RIGHT after. And I think I've heard something about the kind of pot you use... maybe glass pots are a problem, but I cant recall. I never have much trouble, once in a while I get a rogue.

and then roll them in your hand or on the counter to loosen the shell all the way around the egg before you start peeling it.
 
I think someone one here mentioned adding salt to the water while boiling the eggs. Works pretty good for me.

Dozen eggs
1/2 cup mayonnaise
1/4 cup sour cream (preferably not 2 years old :rolleyes1 )
1 tablespoon dijon mustard
1 tablespoon prepared white horseradish
8 oz. bacon, cooked crisp, drained and crumbled fine

Mash the egg yolks in a bowl, then stir in mayo, sour cream, mustard, and horseradish. When the mixture is smooth, stir in the bacon.

Spoon the mixture into each egg half.

Delicious!
