Getting a Lyft

Disney certainly cares because they didn't get to collect the outrageous fee that they would have collected if you had used a Minnie Van.
That's totally incorrect and you know it. They don't care. If they did they wouldn't offer other options.
I'm sure they'd be delighted to get more money with the Minnie Van, but they really don't regulate (or know) how their guests get from place to place at WDW. All kinds of transportation services pick up and drop off inside Disney property. Lyft, Uber, taxis, airport van companies, limousine services, you name it. The Minnie Van is simply an option, if you want a Disney-themed ride.
This on the other hand, is correct.

@kaytieeldr Lyft absolutely offers car seats. When selecting a car option scroll to the right. You will move through the headings "economy," "extra seats," "luxury," and finally "More." Under the "More" heading is where you can find the car seat option. It tends to be an expensive add-on (Im guessing since few Lyft/Uber drivers actually have car seats), so as I said above, if you need one of those then the Minnie Van service is likely more cost effective in that scenario.
You are mixing up Uber. Lyft does not offer car seats. Uber does, exactly as you describe.
You can see for yourself by going to the app right now, place your Pin location at Disney and look at the options offered. Do the same with Uber. See what offers a car seat, and what doesn't.

Thanks. I don't doubt you, but car seats aren't an option in the Boston market (I just checked), and @JimMIA has repeatedly advised they don't.

What market are you in?

If Disney only wanted guests to use Minnie Vans, they would have blocked regular Lyft drivers from picking up and dropping off at Disney properties / MCO / Port Canaveral.
Disney can be wild and crazy at times, but they are rarely stupid! Disney has no objections to Uber and Lyft bringing thousands of offsite visitors to WDW every day. They are not in the business of turning away business!

For the record, Disney has no ability to affect anybody's ability to pick up or drop off at MCO or Port Canaveral. They could limit access to Disney-owned properties (resorts, theme parks, etc), but Florida state law opened up all public areas of the state to all rideshare operators in July 2017.

For almost any transportation question -- whether it's how to get around WDW, get to WDW, or pretty much anything else -- the best place to post your questions in on the DIS Transportation forum.

ETA:
Specific to Uber and Lyft, there is this thread on the Transportation forum: https://www.disboards.com/threads/everthing-you-wanted-to-know-about-uber-lyft-at-wdw.3443634/

I’m not sure if you misread the post or what but they definitely care. The question boils down to does Disney care if you use their product or a compteitor. They care just like they care if you stay offsite or at a Disney hotel, or if you go to universal or Disney. Of course as a business they care if you use competing products. It’s certainly allowed but obviously they care. Not sure why you would think otherwise.

I feel rideshare is different.
Disney was a late p!ayer to the game.
Disney used a limited stock of vehicles.
Disney employs its drivers
Disney will not pick up or drop off anywhere off-site except the airport.
Disney did not create its own platform, but contracts with Lyft for requesting and paying.
Disney charges substantially higher rates than Lyft or Über, or even the taxis they've always allowed onsite.
