General Question about ADRs

I'm travelling with two newbies in late September (adult and older boy.) We'll have a total of 10 days that we could theoretically spend in the parks.

Right now I have us scheduled as follows:

9/20 MK, ADR at CRT for dinner
9/21 DHS, ADR at Brown Derby for Dinner
9/22 MK & Epcot, ADR at Le Cellier for lunch
9/23 Rest day, Rainforest Cafe for lunch and late ADR for Hoop de Doo
9/24 ?, but hopefully DHS with Lunch w/an Imagineer
9/25 Probably Universal & Mythos
9/26 Probably AK
9/27 ?
9/28 ?
9/29 ?

So, here are my questions:

1) What "can't miss" restaurants am I leaving out?
2) Everyone has me scared that all of the restaurants will be jammed due to free dining, but I just have no idea where we'll be those last several days. I wanted to leave them open so my guests could make their own decisions once they get the lay of the land. Should I make dinner reservations at Epcot for each of those nights just in case?
3) Should I make an ADR for the Rainforest Cafe as well? We'd be going to the one at DTD.
 
My suggestions would be definetly Ohana at the Polynesian Resort and maybe the Coral Reef in Epcot. These are our favs, we go to every trip.princess:
 
There will probably have some difficulty getting into restaurants around free dining. But as Kevin says - it never hurts to try. Worse case you'll have to eat CS for some of those days. My DF and I really enjoy Narcoossee's *sp at the GF resort and also Fulton's crab house, though Fulton's is not on the DP. Lastly, a fav of ours in Epcot is Mexico. The food is good nothing amazing, but the setting is really cool - you're inside, but it appears that you are outside at dusk in a village not far off from a volcano!!:thumbsup2

I hadn't even considered the restaurant at Mexico, but it does have some of the best atmosphere in the World. I think I'm also going to try for the Coral Reef for 9/29.
 
We love "O'hanas" for Breakfast.
My DS even though he's Older still likes to see
Lilo and Stitch. There is also Mickey and Pluto.
The food is good and it's easy to hop on the Monorail
to get to the Poly and leave to get back to the parks.
