Usually a main dining room will be open for lunch on sea days, plus the buffet is always open. On some ships, a main dining room is also open for a sit down breakfast.
Depending on the ship, there may be pizza/burger options available at windows near the pool for lunch.

Breakfast and lunch is pretty good at the buffet. We sailed Rhapsody in August and the buffet had a lot of choices, although sometimes it was difficult to find a table.
