Another option is Black Friday. The day after Thanksgiving. With the Ipod Touches being so hot right now, I can guarantee some of the big stores will have awesome prices on these. It will require some planning on your part (Can you say 3a.m. at WalMart last year for a $50 XBox?) but hey....theyre our children, right?

I absolutely plan on getting it engraved. Unfortunately, they don't do that at the store so I'll be purchasing it directly from Apple's website. Hopefully, they'll have some great sales coming up (I don't have the $$ for it just yet).

Do those cases fit the new iPod Touch? The new one is a different size and thickness than the previous version.

I don't need to get a sparkly or glittery case for her --- just one that will protect the unit if she drops it

Speaking of which, can you get any kind of insurance on these things in case they get dropped or if the screen cracks?

In the Best Buy flyer it has a bundle special, and it includes a case and says "for New iPod Touch" so they must carry some cases that are made for the current generation.

The iPod itself will probably not be on sale, but you may be able to get a GC with purchase, or a discount on an accessory bundle.
