When at the outside seating of Gasparilla grill can you see the castle?

Yes, from most of the outside tables you can see it off in the distance. Just the top of the castle over the trees with the monorail in front, but it's a pretty spot to eat. We ate quite a few breakfasts there, as we were in Sago Cay and just next door. The area just behind the marina has the best view, since that's also where they do some wedding receptions and fireworks viewings.
