FTM with a 5 month old

I second getting a good carrier and keep on moving. (Ergo is my choice) we started taking my ODS at 3 months and they are so easy at that age.

Ditto! My step mom just told me on Christmas "I can't believe you didn't cancel your Disney trip since you'll have a baby by then" I think my face went all weird and I said "why would It do that? We took [baby #2] a little younger than that. Pop them in the carrier and go!"
 
Not sure if you are avoiding the parks due to the baby or for a different reason, but if it is an option to go to the parks, I think it might actually be easier & have more of a variety of option to do with your baby in the parks, rather than out of them. Even if you don't want to go on alot of rides (though MK has a good amount of baby friendly very slow moving rides), there are tons of sights for a baby to see, music to hear, smells to take in, etc... by just strolling around the grounds of the parks.

I also agree about booking a character meal. Crystal Palace has Winnie the Pooh & Cape May has a character breakfast. I would avoid Chef Mickeys-we found the music to be way too loud for our DD, who was 18 months old at the time.
 
We took my then 7 month old in October and had the best time! She loved meeting the characters and she mastered waving and clapping while there. It's so much fun to go on IASW with a baby too, the lady in front of us was so excited how cute she was. She squealed to her husband that she got to ride with a baby.

If your concern is the baby, don't be concerned. We did a mix of carrier/stroller; the carriers you can wear in line and on dark rides. We still got to do roller coasters too. We would rider swap during naps. There's not much else to do while napping anyway.

I second the recommendation to use the grandparents and go on a nice date. We didn't travel with others, but wow that sounds like an awesome evening. I would plan to walk the boardwalk and splurge on a signature meal. It might be nice to ride a friendship boat too.
 
Get a good lightweight baby carrier (we are going to use our Boba Air) and do whatever you want to do. I am sure baby would LOVE the pools!

Bring a couple extra outfits, an extra shirt for yourself, a few more diapers than you think you will need, and have fun!
