I have skinless but NOT boneless chicken breasts. How do you fry them? I'm clueless, I've never fried chicken before. Also what do you use to coat them in? I'd be interested in some good recipes. :thumbsup2

I don't fry them. Sometimes I marinate them (I like Lawry's Baja Lime Chipotle), and sometimes I coat them in Oven Bake coating mix and bake them.

If I want fried chicken I go to KFC.

I think it's best to use a cast-iron pan. At least that's what they always seem to use on the Food channel. Then fill it with oil and fry away! I've never done it though...what do you do with all the oil when you're done?

Hmm, tougher call since they don't have any skin, which is the best part as far as I'm concerned. I'd dip them in egg and then coat them with flour (salted and peppered to taste) and fry them in oil. Some swear by Crisco - I use Wesson. About 30 minutes, I think - I usually turn mine up pretty high to brown, then turn it down to cook through.

After the oil cools, I sometimes strain it and refrigerate it if I'm going to use it again soon. Otherwise, I take it outside somewhere and pour it out where the dog won't get it!!!! You could also fill a can with oil and throw it away, but I don't like the idea of grease all over my garbage can, so I use the pour it out method. Or, you could soak up the oil with paper towels - I've done that before, then put them in a garbage bag that ties securely and thrown the whole thing away. It's a mess - but that's what makes the chicken so good!

I've also heard of people using buttermilk to dip instead of egg. I've always used the egg, though. Be sure you beat it well. Some people use cracker crumbs to coat. I think I've only fried chicken twice in my life, though!

Soak it in buttermilk (overnight), dip in egg mixture and then a cracker/seasoned salt mixture. very good.
