Frozen chicken breast ideas?

Cleaning out the freezer and trying to cook more with what we have on hand. I have a large bag of individually frozen chicken breasts and looking for new ideas.

Also, since my DH will be away for work a good part of this year, I'm trying to do a modified once a month cooking thing where I do steps ahead and freeze, or make meals in single portions and freeze.

Ideas or recipes welcome.
Make something in crockpot then freeze in portions?
Boil the chicken, cut up and freeze. Ideas for using that up?
Freeze in marinade? Got any good marinade ideas?

Also looking to lose some weight, so keep the fattening things to a minimum. ;)

I also Dice them up, cook and freeze for use in chicken salad, soups, and pot pies.

You can also cook with BBQ sauce in the crockpot and shred and serve as wraps with Cole slaw one night.
 
Well two recipes I cook when wanting a fast, simple meal are place chicken breast in casserole dish and cover with either a bottle of catalina dressing (Catalina Chicken), or a bottle of terriayki sauce (Terriayki Chicken). Just cover chicken with either and bake at 350 for about an hour if chicken is thawed. I serve with a baked potato or a vege. Also my kids love Chicken and Noodles. Boil chicken breast, then shred. Add to casserole dish with one can cream of chicken soup, half a can of water, salt, and pepper to taste, and one bag of boiled extra wide egg noodles. Put half a stick of butter on top in pats and bake covered at 350 for 30 minutes. My kids like cranberry sauce with it. Hope this helps. :goodvibes
 
I make:

-Chicken noodle soup (with thin spagehetti, celery, carrots, little red onion, and cook with a bay leaf)
-Chicken enchiladas (poach chicken in water for 25 mins, then shred; very quick)
-Chicken noodle casserole (wide egg noodles, cream of chicken and cream of mushroom with 1/2 cup sour cream, bag of frozen veggies, put in the oven for 25 mins at 350 is yummy!)
- Lime honey chicken (cut up chicken breast in long pieces and cover them in a flour, paprika, and salt mixture. Put in skillet with 1 tbls butter and 1 tbls olive oil, and cover with a mixture of lime juice, chicken stock, 1/2 cup honey, 2 tbls worch sauce, and lemon juice and cover chicken for 20-25 minutes until completely cooked)
-oven fried chicken

There are SOOO many different ideas you can do!

Put several in a crockpot with a pkg of taco seasoning & a bit of water. Cook on low all day & then shred. This gives me several quick meals, depending on how many breasts I use. I put the extras in the freezer in meal-size portions & its great when I need a quick meal.
Also, recipezaar.com use to have several recipes for 'dump chicken'. You put 3-4 breasts in a large freezer baggie & then there are various ingredients you add to make a marinade/sauce. I can't remember all of them but the ones I tried were very good.
 
I make Chicken Divan (you can always use the healthy version of cream soup and cheese) or Oriental chicken (I like orange-ginger sauce, broccoli, water chestnuts, sprouts, whatever veggies you want to add).
 
Mexican Chicken

1.5 - 2 lbs of boneless skinless chicken
1 can black beans
1 can tomatoes with mild green chilis
1 jar salsa con queso

Put the chicken in the crock pot, add beans and tomatoes (undrained). Cook on low for 8 hours or high for 4 hours. Remove chicken and shred. Drain off excess liquid. Return chicken to crock pot and add salsa con queso. Mix well. Serve with warm tortillas. I serve it with extra salsa and sour cream and a side salad.

Stuffed chicken breasts

4 boneless chicken breasts or 1 per person
1 container of blue cheese or feta cheese crumbles
oil for frying
salt and pepper to taste

Defrost 4 boneless chicken breasts. Cut a slit down the middle of the chicken breast creating a pocket. Stuff the pocket with 2-3 TBSPS of the feta cheese. Add oil to a frying pan brown chicken breasts on each side. Bake in over about 35-45 minutes at 350 degrees or bake until juices are clear and the chicken is no longer pink.

Easy Chicken Pot Pie
1 chicken breast per person
1 can chicken gravy or make your own with chicken stock and flour
1 can Pilsbury Grands
1/2 package frozen mixed veggies
2 microwaved potatoes (optional)

Preheat oven and bake biscuits for 5 minutes at 350. This insures your biscuits are not soggy on the bottom.
Defrost 1 chicken breast per person. Cut into bitesized chunks and fry in frying pan til no longer pink and cooked through. Add one can of gravy, 1/2 package frozen veggies (I also microwave 1-2 additional potatoes and chop and add them. Heat veggies through and add to a casserole dish. Top with Pilsbury Grand biscuits. Bake 25-30 minutes til biscuits are cooked through.

I make a sweet/sour chicken that can be made in the crockpot or oven.
Put 4 or 5 boneless breasts can be made using frozen in the crockpot or a casserole dish. In a bowl, mix one envelope of onion soup mix with one 12 oz jar apricot preserves then pour that over the chicken, that's it!
Crockpot 4 hours on high or in the oven for one and 1/2 hours if starting with frozen chicken, one hour if not at 350.
I also make some rice to serve with. It's kid tested, my kids love it LOL
 
I love to have cooked chicken in the freezer. It makes meals so quick to fix. A few of my favorites are:

Chicken Tortilla Soup

Chicken Tetrazini
- this freezes really well too, if you have leftovers or you can freeze part of it before you bake it.

BBQ Chicken Fajitas - you can grill the chicken and freeze it for later too.

My DH and boys love Italian Chicken: cook a few chicken breast, cut up/dice, cook penne pasta, mix together with Italian dressing/ I half half zesty and half regular, add cut up black and green olives - yummy! I always make lots of this to have for lunch the next day. :thumbsup2
 
I've been living on the following salad:

mix grilled chicken breast (cut in strips) with spring mix, fresh cherries or strawberries, feta cheese, sliced almonds, and fat free balsamic vinaigrette. Yum!

I will put a few frozen chicken breasts and a jar (or 2)of spaghetti sauce in the crock pot on low - because the sauce is seasoned, there isn't much else you have to do! It can be frozen, or you can make pasta to have with it, or you can put it on sub rolls with some provolone cheese on top & bake in the oven till the cheese is melted. (yummy!)

I make Salsa chicken in the CrockPot....2 frozen breasts (nice thick ones) and a jar of Salsa, shred and use for Fajatas, burritos, buritto bowls, etc.
Second favorite is 2 breasts with Cream of Chicken soup, onion and water...shred then add a package of biscuits in the last hour of cooking and a frozen package of Peas and Carrots.
 
I use those frozen chicken breast mainly in 3 recipes.

#1 Chicken taco soup. This is the worlds easiest recipe. I call it the 7 can recipe.

1 can chicken broth
1 can black beans
1 can corn
1 can red kidney beans
1 small can tomato sauce
2 cans of Rotel
1 package of taco seasoning

Empty all the cans into the crockpot. Add the taco seasoning. Place frozen chicken breasts in and push under the liquid. Cook on low for 6 hours..after about 5 hours, remove the chicken and shred it and put it back in. Serve with sour cream.

#2 Buffalo chicken dip

Boil 2 chicken breasts and shred. Mis together a block of cream cheese, a cup of blue cheese dressing and a cup of Franks' Red Hot sauce. Add the chicken and bake for about 40 minutes. Serve with Scoops tortilla chips.

#3 Italian Wedding Soup

About 6-8 cups of chicken broth, 1 cup of beef broth. I saute chopped celery and carrotts in a bit of olive oil and then add them to the broth. Add italian seasoning(maybe a tsp)salt, pepper, garlic powder. I add chicken breasts that I have boiled and shredded. Cook for about 4 hours in the crockpot. Then I add frozen meatballs(I make my own turkey meatballs in a mini size when I am making my meatballs for sauce and freeze them) and about a 1/2 a pack of chopped frozen spinach. I also add about a cup of acini de pepe pasta but any small pasta will do. Make sure to add a lot of grated cheese when serving!
