4 boneless, skinless chicken breasts
1-1/2 oz. pkg. onion soup mix
1/4 t. garlic salt
1/4 c. Italian dressing
1/4 c. water
buns
garnish: lettuce, sliced cheese, sour cream, ranch salad dressing, etc.

Place chicken in slow cooker, sprinkle with soup mix and garlic salt. Pour dressing and water over chicken. Cover and cook on low setting for 8 to 9 hours. Remove chicken and shred with 2 forks; return to slow cooker. Serve with a slotted spoon on buns; garnish as desired.

This also freezes well.

Garlic lime chicken! Yummy!

Chicken fried rice

Im looking forward to trying many of the recipes listed here!

My kids love when I make my own version of chicken strips. I crumble up tortilla chips and mix it with some spices, then dip the chicken in the mixture and bake it in the oven. You can use what ever spice suites your taste. I have a bottle of poultry spice that I use, or sometimes I will try a different spice to change things up a bit.

I also make a chicken rub. Use 1 tsp salt, 1 tsp white sugar, 1/8 tsp of the following spices: ground cloves, allspice, ground nutmeg. Mix all of those spices together and rub it on the chicken, then bake in the oven. You can also do this on a whole chicken.

lots of good ideas upthread:thumbsup2

I make a sweet/sour chicken that can be made in the crockpot or oven.
Put 4 or 5 boneless breasts can be made using frozen in the crockpot or a casserole dish. In a bowl, mix one envelope of onion soup mix with one 12 oz jar apricot preserves then pour that over the chicken, that's it!
Crockpot 4 hours on high or in the oven for one and 1/2 hours if starting with frozen chicken, one hour if not at 350.
I also make some rice to serve with. It's kid tested, my kids love it LOL

I planned on making this tomorrow in the crock pot....but I picked up Orange Marmalade on accident :headache: Think that would work??

Also, do I mix the onion soup w/water (like I'm making the soup on the package) and then mix in the marmalade....or mix the soup w/the marmalade?? Can you tell I'm not much of a cook :rolleyes1

Southwest Chicken

4-6 Frozen Chicken Breast
1 can whole kernel corn (without juice)
1 can black beans (drained and rinsed)
1 16 oz jar salsa

Put EVERYTHING in crock pot and cook all day on low!!

Serve with rice or chips or shred for tacos! Normally I save some for a couple of nights later and make a chicken enchilada casserole.

Good luck!

Throw a few in a crock pot with taco seasoning and rotel tomatoes, low all day long. SOOOO good, the chicken just shreds apart. Great for a salad or taco's.

I made chicken breasts with a large jar of salsa in the crock pot to use as dinners at work this week. I took the chicken breasts straight from the freezer and put them in the crockpot and covered it with Aldi's medium salsa- cooked 10 hrs on low and it was great-served over rice. I also like how other people are shredding it for tacos or burittos- that would be a great way to stretch one meal into several. Thanks for bringing up the subject- great ideas!

Chicken -n- dumplin's in the crockpot. Comfort food!
Just put the chicken in (frozen is fine) with cream of chicken soup and about 1 cup of water. I add some extra bouillon for more flavor and 1/4 of an onion. Cook on low for 7 to 8 hours. About 1/2 hour before serving add refrigerator biscuit dough torn up into pieces. Cook on high. Serve over mashed potatoes.

Buffalo Chicken (great for sandwiches or to make dip)

A few (4-ish) frozen chicken breasts (fresh works too)
One bottle of buffalo chicken wing sauce
2 Tablespoons of butter
1/4 to 1/2 cup of water or chicken broth
One packet of dry ranch dressing mix (optional, I always forget :lmao: )

Stick it all in a crock pot and cook on low for at least 6 hours (shred towards end of cooking). I normally let this cook overnight or 9+ hours while I am at work.

:thumbsup2

I've been living on the following salad:

mix grilled chicken breast (cut in strips) with spring mix, fresh cherries or strawberries, feta cheese, sliced almonds, and fat free balsamic vinaigrette. Yum!

I add chopped pineapple to mine. I love it!

I use them in the crockpot quite a bit. I have done:

BBQ chicken - one small bottle of Sweet Baby Rays mixed with a bit of water, pour over chicken and cook on low all day.

Just chicken and enough water to cover 1/2. Cook on low all day. Shred it and mix with Alfredo sauce. Use it to top thin spaghetti noodles. This is my kids favorite.

Taco chicken - Mix a cup of water and a packet of taco mix. Pour over chicken, cook on low all day. Shred or chop and use it to top Taco Rice from Lipton.

Top in CP with Italian dressing. Cook on low all day. Serve with veggies.

Mix one can of Campbell's Cream of Chicken with a can of water. Pour over chicken in CP, low all day. Serve with whatever you want :) DH likes it with mashed potato so he can use the soup as a gravy.
