What are the chances of booking 3 studios 7 months out at Poly for May 31-6/2 2018?

Just guessing & assuming you are trying for standard view - probably a little better than 50-50.

Working against you - you need 3 villas and can only book one at a time.

In your favor - you need two nights in the middle of the week and your dates are during a period of lower demand.

Not a Holiday weekend - Memorial Day in 2018 is 5/28.
