Gosh, all the way from Kansas City?! (hee hee) I think the answer is no. There used to be an outside service that rented mini-refrigerators to Disney guests. Disney put a stop to that a year or so ago. I want you to know, however, that all is not lost as you may be able to rent one at your WDW resort. Guest Rooms:
These rooms feature two queen-size beds, one day bed, table and chairs, ceiling fan, vanity area with two sinks, and bath. Most Guest Rooms offer private balcony. Many Guest Rooms feature garden or water views. Non-smoking rooms and rooms for Guests with disabilities are available.
Guest Room amenities include in-room safe, voice mail, phone in bath area, robes, hair dryer, iron and ironing board, and minibar. A limited number of refrigerators and microwaves are available on request.

Presleyg, give the All Stars Front Desk a call. They should be able to tell you whether or not it is allowed. Since Disney made that outside service stop renting to on-site guests a year or so ago, I figure there was some kind of safety/legal issue to things like that being allowed on property. Your resort should be able to answer that question for you. This may be the number for the All Stars (I got it from the Disney World website): 1-(407) 939-7000.
Just returned 5 days ago. My parents brought a mini fridge to the CR. No problems. As long as you are driving, I would give it a try. The worst that could happen is that they ask you to take it out of the room & you rent one of theirs for $10 a day. We also had a toaster oven in our room & had no problems with that either.
