It WILL cause the VERY hot oil to "erupt" out of the pot, probably splashing you and catching fire from the burner.

that is why the turkey must be completely thawed and dried! (of course, you can use a "fresh" one too!

I find it amuzing that every year some fire department will do a video to show the danger, where they will either "cannonball" the turkey into the oil, thus causing a fire, or lower a frozen one, with the same result.

all it takes is a few precautions, such as a thawed, dry turkey, and SLOWLY lowering it into the oil, to do it safely. (and have the burner and set up AWAY from structures)

after all, if you were cooking in your kitchen, you wouldn't throw or drop other food into a pot of hot oil.

Yep. I guess they want to emphasize that it isn't idiot-proof, but it's FRYING, for Pete's sake -- frying is NEVER idiot-proof.

I always say that it's the best idea to use two people to do the lowering. That way you can use a pole, which lets you stand WELL back and have someone with you in the event of disaster. (We've never had a foam-over, either, FWIW.) Besides, if you have company out by the rig you won't be tempted to leave it unattended "for just a minute".

If you Google, there is a story out there on the Web from a Dallas TV station that purports to tell you how to do it safely. The idiot they interviewed is like a textbook example of how NOT to do it -- he sets his rig on cardboard, frys about 6 feet from the house, and doesn't wear a splash apron. He even has recommendations for the proper placement on a deck or in a carport!!!

FTR, *NEVER, EVER, EVER* set up a fry rig on a wooden deck or under any kind of fixed roof. You want to be at least a good 15' from any fixed structure. If you MUST have a weather cover (and I don't recommend it; too dangerous, IMO), use a cheap marquee tent that won't be a big loss if it burns down, and set up at the edge of it so you can get out from under with one step backward. If it's really raining, then put the bird in the oven, because frying outside in the rain is a disaster waiting to happen. Also, never run an electrical line near a fry rig -- fry in the daytime!
