Fried shrimp using pancake mix

Has anyone tried this? Do you add anything extra to the batter??
 
I make beer batter shrimp all the time.
Just flour & baking powder, a little paprika, and some other spices.
Pretty sure pancake batter is just flour and baking powder and a bunch of stuff added for flavor that are probably both bad for you and the general outcome of shrimp.
So first I'd use flour and baking powder and spice at your own pleasure, and of course beer.
If not I would try using beer for water or for half the water amount even with the pancake batter but I am not sure if the flavors would clash.

I do the same for tempura shrimp and tempura chicken and add Panko bread crumbs. Panko bread crumbs are like Rice Crispies without all the sugar. So the batter stays light & crispy and not doughy.
 

What is your end goal? I would guess that you'll end up with a coating that will rise when cooked, and it will be sweeter than normal shrimp batter. I think this would be similar to the batter on sweet and sour chicken/shrimp at a Chinese restaurant.

If you are looking for a more traditional fried shrimp but prefer a mix, I like Zataran's Fish Fry mix. In reality, I usually use flour or Panko or Italian bread crumbs and seasons to taste.
 
Krusteaz....the pancake mix folks.....make a fish batter mix that a lot of the mom and pop fish and chips places around here use. I can't find the ingredients to compare, but I suspect they may be very similar.
