I posted this question on the cooking board, but I don't know how much traffic that board gets. I went to a party a few weeks ago, and had the most delicious fried onions on my hamburger. They weren't breaded onions. They were just sliced and thrown into a frying pan with garlic and other ingredients. Delicious! Does anyone have a recipe for something like this? I'll check with some recipe websites too, but I like getting personal recipes from my DIS friends! TIA! :goodvibes

All I do is LOW fry onions with butter and garlic- the low so the onions can carmelize. low and slow.

I have had them also like that then mixed with hot sauce so hot a spicy onions! (I liked those too)

And someone made the onion relish at a party I was at.
Onion Relish

2 tablespoons extra-virgin olive oil
3 cloves garlic
2 onions, cut in 1/2 lengthwise and sliced thinly
Salt and freshly ground pepper
1/2 cup water
1/2 cup ketchup
2 tablespoons yellow mustard
Heat a large skillet over medium-high heat and add the olive oil and garlic cloves. Saute the garlic until lightly browned. Add the onions and continue to cook the mixture until golden brown. Season well with salt and pepper, add the water, stir, and bring to a boil, scraping up the caramelized bits on the bottom of the pan. Stir in ketchup and mustard. Simmer until thick. Remove from heat and let cool before serving with the burgers.

When I grill burgers , DW slices up an onion, coats it with a little olive oil, and a dash of garlic salt.

I then put them on the grill. (i bought a small mesh metal grid for grilling vegatables that sets on the back and keeps the veggies from falling through the grate.)

I turn them a couple of times. I usually put them on when the burgers are about half done, give them enough time to cook.

pile them on a burger and munch away!!!

Mmmmmm!!

to make carmalized onions takes dedication and practice! imho!

I take a vadilia or large spanish onion - cut it in half - then its more stable to slice very very thin -

in a large frying pan I drizzle olive oil - and I have the heat on medium - put the onions in there, stir, just before they start to brown, but are starting to 'sweat' (get clear) I turn the heat down to low... and add 1T sugar I let the sugar sit on the onions for a bit before stirring the onions...

then you watch and stir about every 5 min or so - if you dont watch it you could burn the onions -

it usually takes me 45 min to get them just the right color -

then I let it sit in the pan - and they get crunchy!! which works well on the burgers!

sometimes I do add a tsp of butter to the cooking process - sometimes I dont add enough olive oil and the onions seem to "dry" - this is all subjective and thats where the practice makes perfect comes in to play!

thats a lot of work to acheive the same thing I do.

then again, I can grill all year round so I don't have to cook indoors!

Sometimes I put the smoker on and get a good cedar or hickory smoked onion!

hehehehhehee

Grumpy you are right it is a lot of work - but its not the same -

However, I give you 2 :thumbsup2 because your recipe is simple and does have a great flavor - but its not carmalized (ie sweet crunchy - almost to the point of fried! totally hard to describe! )

I made them for my mom, because she makes them like you describe (OK actually my dad does!! or DH!) and she keeps calling me to ask me how I make them - they were blown away with the flavor -

but only because it was "different"

sometimes different is good!!

but when I dont want to spend a lot of time - your way is best!! ;) It has more of a smokey flavor (esp if you add those wood chips to the coals!!)

Java's recipe has merit also - it wont take as long as mine (because hers has all those other flavors to add to it!!)

FIRE outside...GOOD! MAN COOK FOOOOODD!!!...have brewskis!

Kitchen..... BAD PLACE...stay away

Thanks sooooo much everyone! The only problem is - I'm hungry NOW and the party isn't until next weekend. Maybe I should try all your different recipes this week and choose my favourite for the party. :lmao::cool1: Sounds good to me!

:rotfl2: Grumpy! (but oh so true!)

I think Java's recipe would work well for your needs - but I wouldnt add the garlic right away (garlic has a tendency to burn easy imho - after cooking the onions down a bit, I'd add some garlic - or eliminate it altogether ;) -
