Freezing corn on the cob

I remember seeing a thread about freezing corn on the cob lately, but I cant find it..

A local grocery store had a good deal on corn on the cob so I bought some and now I need to find out how to freeze it..

I was thinking I should shuck it and then put in freezer bags, but my dad said that it would be better to leave in the shuck and freeze that way..

Does anyone know the best way to freeze corn on the cob??
 
I always shuck it, then put them in a good freezer bag. If you are going to keep them for a while, you may want to wrap them, then freeze - mine always seem to get "icey" if I don't...:)

Im going to go ahead and wrap it first and then freeze it..
 
You want to Blanch the corn 1st we do because vegetables contain enzymes that over time, break down the destroy nutrients and change the color.

We have about a 75' x 75' garden and do tons of freezing
beans / corn and such.

how long do I boil them for?? I assume just 2-3 minutes??

DH's grandfather was a farmer, and he did this as well. The corn always froze beautifully this way!
 
I agree with blanching first. A minute or so in boiling water then into an ice bath to cool them. Dry them and put them in freezer bags.

On a related topic, I just read in Cook's Illustrated that when buying corn on the cob, if you won't be eating it the same day, put it in a wet brown paper bag and put that into a plastic bag in the fridge. That keeps the starches from breaking down (or whatever the technical explanation is). We tried this the other day and it was perfect the 2nd day.
 
I buy my corn from a local farmer. When we buy it, he fills up feed sacks for us. I put mine in the freezer in the shuck - BUT I do take a really sharp knife and cut off both ends first.
