Freezer meals for a week - ideas please

I'm leaving my husband and kids home alone for 8 nights while I visit my father who is undergoing cancer treatments.

I'm planning to put together casseroles so my husband can just thaw them and pop them in the oven at night. I've done this before when we've left the kids with MIL. But, we've never gone for this long, so I'm a couple of ideas short.

I'm planning:
Chicken Pot Pie
Baked Ziti
Spaghetti/Meatballs
Tator Tot Hotdish
Tacos
Meatloaf

They can do frozen or carry out pizza one night and leftovers, too.

But, that's a lot of hamburger dishes. Any other suggestions/recipes?
 
Pulled pork and mashed potatoes? Can freeze pork in ziploc and he can dump it in a crockpot in the morning and turn on low. Should be defrosted and hot by dinnertime.

Quiche

At the beginning of September, I had to make quite a bit of meals for our freezer to prepare for the son of my birth. One of the meals I made, that I had never tried before but was a huge hit for hubby and I was Sour Cream Chicken from the 'Once a month Cooking Family Favorites' cookbook. How about just some ham slices he just needs to put them in the oven to warm them up, and some cheesy potatoes as a side dish. Stuffed shells? Or some meat he can just throw on the grill?
 
When I was in a similar situation I got one of the fully cooked spiral sliced hams from Costco (smallest one they had). DH and the kids loved having that heated the first day and then for sandwiches all week.
 
While its not too budget friendly but I buy the Perdue (or similar brand) pre cooked chicken (they keep long unopen in the fridge), tortillas, shredded cheese, salsa, etc and let them warm up the chicken and have burritos/soft tacos, whatever you wanna call them. ,
 
This is so easy and I just did it for dh's deer camp.

  • Put a plastic crockpot liner in your crockpot.
  • Toss in all the ingredients for chili. Don't bother to heat it through, just make sure the meat is cooked and well drained.
  • Take the crockpot stoneware liner out and put it in the freezer.
  • The next day take the plastic crockpot liner filled with chili out of the stoneware.
  • Place the bag full of frozen chili in a 2 gallon ziploc bag.
  • Place in freezer.
  • The day you want to cook the chili, put chili with the plastic liner in the crockpot.
  • Place crockpot on low for 6-8 hours.
  • The chili will be thawed and warm. Just stir and enjoy.
 
My quick go-to freezer meals are chicken enchiladas and stuffed shells. You could also make a big batch of bar-b-q and freeze it. It can later be warmed up and served with pasta salad, chips and fruit. You could make a couple batches of soup as well. The two I make the most are chili and vegetable soup.
 
Maybe you're already doing this for lunches, but you could leave them hot dogs or bratwurst and hot dog buns in the refrigerator. For a freezer-to-oven meal, I like to make mac and cheese and put sliced kielbasa on top.

To solve the problem with not enough pans, line each with enough foil that would wrap the entire dinner. Freeze in pan then take out of pan and put in freezer bag.

You can also head to the Dollar Tree and pick up disposable 9*13 foil pans for 2 for $1.
 
Not sure how handy your husband is at the stove, but what about having a breakfast night. Get some pancake mix that you only need to add water, maybe cook up some bacon or sausage. Call it dinner. We like to do breakfast dinners once in a while.
