You do not need to get a no-expiration option on a one-day ticket. By definition, a one-day ticket does not expire until it is used.

If you want to renew your APs, you can use the value of the one-day ticket toward the AP renewal. You must present the KTTW card containing the one-day ticket when renewing your AP and ask to have it applied.

Our APs don't expire until next December. Would we be able to save the one-day ticket while there in September and use it to renew at some other time?

A one-day ticket never expires. You can save it as long as you want. They expire only at the time they are actually used.

As far as using it to renew an AP...I have only renewed in person at Guest Services at WDW. I can tell you you can definitely use a 1-day ticket toward a renewal if you do it in person at WDW. As far as using one to renew by mail, by phone or any other way, I can't attest to how that would be done.
