Free Dining in Sept.--availability of signature restaurants

We are with a large party of nine. DH and I have considered slipping away for one or two nights and having a signature dinner alone. Do you think it would be difficult to get an ADR for two people at one of the signature restaurants on a last-minute basis? We don't want to plan it now--we just want to do it spontaneously.

It can't hurt to try to get an ADR now for a place you want, because I don't think anything can really be that spontaneous during free dining!
