So, the meatballs got cooked, the volunteer computer work is done (must practice saying "Sorry, I really don't have time to help with that" 2000 times- Madd, where's your discipline smilie???), and I made it to yoga this morning. The sun is shining, and I actually wouldn't mind catching that cleaning bug you all seem to have (but the mange, you can keep...) !!

OMG- I am being lazy after cleaning the oven. I am watching the Food Network (while DH makes me a Feta cheese omlette! ) I usually hate the Food TV- But I think I am feeling a cooking bug coming on!

Anyway- I am watching this woman, Sandra Lee, make tie-dyed cupcakes from boxed cakemix! They look so cool- they are SO me! And are so easy to make- look at them!

I don't want the dessert making bug- I think I will go with making "real food"

Those are from MY era, too...you know .....The FIRST time around with tye-dye (what are we on now, the 3rd round of tye-dye?)

I can figure out how some of those designs were made..really easy just "bullseye" rings of piping gel and then taek a toothpick and drag the point from one edge of the cupcake to the center...very cool..works great with black for spiderwebs..


I got the dessert bug yesterday and made cupcakes. I got the recipe in a magazine, and the boys turned their noses up at it..so I made them while they were gone, and they can have one when they get home...or not.


The are lemon cupcakes w/ lemon cream cheese frosting..they are really yummy... Wish I could share with ya, I know YOU would appreciate them...

Here is the recipe for the cupcakes I made yesterday..they are so yummy, not a really strong lemon flavor, the frosting is incredible, I have been eating the leftovers with a spoon!!

The frosting recipe is about twice as much as you need, and it turns out to be very soft. Even with refrigeration..not like a glaze or thin like icing, just soft...

Lemon Creamcheese Cupcakes

Prep Time:
10 min
Total Time:1 hr 34 min
Makes:24 servings, one cupcake each

1 pkg. (2-layer size) white cake mix
1 pkg. (4-serving) JELL-O Lemon Flavor Instant Pudding & Pie Filling
1 cup water
4 egg whites
2 Tbsp. oil


Frosting

1 pkg. (16 oz.) powdered sugar
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1/4 cup (1/2 stick) butter, softened
2 Tbsp. lemon juice

PREHEAT oven to 350ºF. Beat cake mix, dry pudding mix, water, egg whites and oil in large bowl with electric mixer on low speed until moistened. (Batter will be thick.) Beat on medium speed 2 min. Spoon batter evenly into 24 paper-lined 2-1/2-inch muffin cups.

BAKE 21 to 24 min. or until wooden toothpick inserted in centers comes out clean. Cool in pans 10 min.; remove to wire racks. Cool completely.

MEANWHILE, beat sugar, cream cheese, butter and juice with electric mixer on low speed until well blended. Frost cupcakes.

Kraft Kitchens Tips

Prepare as directed, using PHILADELPHIA Neufchatel Cheese, 1/3 Less Fat than Cream Cheese.

Jazz It Up

Stir 1 tsp. grated lemon peel into frosting mixture.

Yes, I have been hold up in my studio/scraproom - (hiding from husband and kids)Doing Landry, cleaning the kitchen for the 15th time. I swear I get it cleaned and looking nice and DH comes in and BOOM it looks like a bomb went off in it...

And speaking of DH - he is in the DOG HOUSE this morning. We are sitting on the couch have our coffee (7am) before the kidlets get up. I mention that a bunch of stuff was knocked off of my night table the other day while he was flipping the mattress (long story there). He says something like "Gee how could you tell" - impying a mess. I say -"Cause it's all disorganized now". "Right, like you are organized..." he sneers...

EXCUSE ME!!! - I am disorganized? Ok - I just ran upstairs and took pictures of my studio and his office... you be the judge

It's nice that you can balance each other out. I'm afraid if I had a craft room like you do, it would look like his office, only much more colorful!

Mine is awful for knocking things off, dropping things, moving things, whatever...and leaving it there...so at least yours made an attempt at getting it off the floor?

I should run back up and take a picture of his office floor - you can barely walk in there. He has 2 or 3 bikes in there too, along with all of his cycling gear... I just shut the door - so that it doesn't contaminate the rest of the house.


I will have to be nice to him though, because he is installing TiVo in my studio as we speak

Ok, I can't go to Disney until April 09. We are living the Dave Ramsey plan and know it is right.

But I really love Disney and want to go bad....can I just do all the planning but not go? I made a ticker, now I want to pick out restaurants and do a park plan. Is this just too stupid? Will it help me through this hard no Disney time?

Of course you can plan...that is half the fun! And the more you plan and get an idea of what each thing is going to cost, the better you can work it into your budget! Congratulations on finding a financial plan that you can do. I am going to look in on DR, I have heard a lot about that..

I always make my reservation about 10-11 months in advance(not really that early to Dis standards, but early for me!) Then I play with it...I hear about a discount on the Dis. I call to add a day.. I change the resort..sometimes I think I call just to hear the voice of a Cast Member!!

Well todays cleaning bug had me cleaning my oven this morning!

Yes- I am one of those unfortunate people w/o a self-cleaning oven. Get this- the oven is only 2 years old. AFTER we got the darn thing DH said- I can't believe you did not want a self-cleaning oven!

What!!? I totally forgot to even think about that when getting an oven- HE said he told me to get one and that I said no- I did not need one! ahhh- hello? Girls- my question to you......would any of you EVEN turn down the idea of a self cleaning oven??? No. That is what I thought. I told him I did not even hear him mention that when we were buying it! He said I did.

So- as I had my head in the oven this morning He walked upstairs and I looked at him and said- "Does THIS look like someone who did not want a self-cleaning oven?"

.......men......

I would have stuck his head in the oven and turned it on. No women would refuse a self cleaning oven. He is such a guy

They sound delish! Wish I would have seen this before I went to the grocery store. I have it all but the lemon pudding & cream cheese. Maybe I'll have DH stop on the way home tomorrow to pick up those two so I can make them.

wow nice studio. You DH office looks like the one at my house. My whole house is in uproar. DH as not been doing such a good job as house hubby. But I am going to get back into the cleaning bug. Being home it is driving me nuts so we are going to hav a cleaning party. He just does not know it.

Hey!!! Ya'll didn't even miss me this weekend. I'm going to pretend that you were all just assuming that I was out living my glamorous life and that's why you weren't worried.

I have the opposite of whatever housecleaning bug everyone else seems to have. My house looks like a train wreck on the best of days and this is sooo not the best of days. My kitchen is **** & span(but I always have to keep it clean because that is my happy place ) but the rest of the house needs to be boarded up. I have been on a baking spree and made a sour cream coffee cake and chocolate chip cookies. Yumm... Dh is going to put us some ribs in the smoker for dinner. So much for dieting.
