Just got back from a Disney cruise and 3 days at the park(staying off-site) and Didn't have any issues at all.
I was worried about the FP+ and it was a little bit of a pain to set it up but it worked well, but I chose the right days at the right parks so it wasn't too busy.
Also, my 80 year old parents came with us so we had a slower pace.
One complaint would be that I wasted some FP+ selections because the wait was 10 mins so we went through standby and the FP wouldn't have saved us any time. My son and I rode Star Wars 4 times in a row around 11am instead of using a fastpass. At HS the only FP that we needed was TSM. My kids are too small for TOT and RRC and my parents don't like wild rides.
At MK, we were lucky enough to get A&E FP for the morning and the wait was probably 10 mins. We also FP Peter Pan and the mountain rides and waits were really small.
At Epcot, we rode Soarin but by the time we did all the FP's Test Track return times were to late...
Overall, our longest wait was probably only 10-15 mins.
Also I didn't have to run around collecting FP's all day...

You can get to the park whenever you want and not have to worry about if there will be FP+s left (if able to make them in advance) and even if you can't make them in advance, you can do all your selections in one place at once.
