FP+ Strategy Check

First timer to Disney with Fastpasses! I have a couple questions on how best to do this.

Our trip starts 1/29 when we check into the resort, but we won't be using our park tickets until 1/30. I can start booking all of the FP+ on 12/1 though right? Is it likely I'll have to be on right at 7am to start booking these? Also I read somewhere that once you use one you can make more FP+ reservations?

The travel group is me, DH, my mom, DD (will be 4 and likely 38-40", loves coasters) and DS (infant). I'd like to use one or two so DH and I can go on some bigger coasters while my mom watches the kids, any suggestions? We are not going to DHS. We love coasters and live near Cedar Point so pretty much nothing at WDW would faze us, but this trip is mainly for the kids so we'll be going on rides with them. It would just be nice to do a coaster or two just us.

We are getting to the parks early and I'm not sure if we will need FP+ at that point or not, or if we should book them later in the day. We have an 8:10AM ADR at Tusker House (morning EMH day) and want to ride the Safari afterward. The next day we have a 9:35AM ADR at Akershus and would like to ride Frozen Ever After beforehand if possible. If we go straight there at rope drop can we just get on or should we still do a FP+ just in case?

I've been checking ride wait times via the app periodically throughout the day to get an idea, but I also know this is summer and it's probably going to be busier than in January/February. I'm not really sure what type of crowd to expect. This morning there weren't any wait times until 9:45AM except Frozen and 7DMT. Any other suggestions for rides DD can go on/characters that we might need to use a FP+ for? Seems like Frozen, Ariel's Grotto, Tinkerbell Character Spot, Belle's Tales, and Peter Pan's Flight usually have the longest wait times. TIA!
 
Actually, you can book your FPs on 11/30, which is 60 days before your check-in date (it doesn't matter that you don't plan on going to a park that day).

1 if you stay on site you can book 60 days before your trip off site it is 30 days

2 yes after you use your 3 you can book another FP

3 the only big roller coaster is at HS RnR
others smaller ones

7DMT ok for a little one
Space motion no really big drops but in the dark
BTMRR really jerks you around not that many big drops
splash mountain water ride ( 90? foot drop)
Brain stormer ( a fun first time roller coaster)
POTC has one drop

EPCOT
TT goes fast at the end but no drops
FEA a few small drops
sum of all thrills ( it maybe leaving) but you can make your own roller coaster)

AK
EE a few drops back wards in the dark
Dianasor ( can be scary but I would not conceder it a roller coaster)

HS
RnR goes upside down 2x fast start fun

4 I do not book any FP for the first 60-90 minutes the park opens most rides are walk on if there is something you have to do book a FP for it with little kids you may not be able to get to the park as early as you want or walk as fast as you want ( FEA can get a long line with in 5 minutes of park opening)

I would look at the highs of the rides and how hight hight your DD is or you think she will be this will tell you what rides she can do on MDX you can see if there are big drops dark ness extra you know your DD best if you have a question about a ride ask it here but there are simply too many rides to go over all of them.
