How many Fast passes does each person get a day? Also for the princess meet and greet, do I need one and my daughter (3) need one, or just her? With Cinderella and Rapunzel is it smart to get a FP?
 
Each person can pre-select 3...once you use those 3, you can get more in the the park (one at a time), but many of the the most desired FP will be gone.

If the child is under age 7, she cannot go on rides/shows/attractions by herself, so she AND an adult would need a FP

Each person gets 3 initial FP+ selections, after using these 3 FP+, you are allowed to select additional FP+ one at a time.

All guests entering an attraction's FP+ queue must have a valid FP+ for that attraction, including all character-based attractions such as Meet and Greets (M&Gs). The only exceptions to this are small children under 3yo, who need no FP+ for any attraction.

For Cinderella and Rapunzel, it depends if you want to wait in stand-by or not, you kind of have to make that decision, but wait times can easily be 45 minutes to an hour (depending on time of year, crowd level etc.)
