FP+ Much of a difference between 30 & 60 days?

Hi All,
My family of 4 is headed to the World August 9-21. We are doing a split stay - offsite Aug 9-16, then we are at the Poly from Aug 16-21. Obviously we can get our FP+ 60 days out from our Poly stay, but not from the first week we will be there. We are considering a throwaway room on August 8, just to be able to get the FP+ 60 days out for our entire trip.

My question is this: Will Fast Passes be so much in demand that I will notice a big difference between booking 30 days out and 60 days out? We don't do meet and greets, so A&E are not a factor. We do the big rides, R&R, ToT, the Mountains, etc.
