It's not eastern standard time.
It's whatever eastern time is in when you are making them.
The second Sunday in March through the first Saturday in November is eastern daylights savings time and the first Sunday in November through the second Saturday in March is eastern standard time.
Since FL does go with daylight savings, I would think this only gets confusing if you are somewhere where they don't. If all else fails, google to see what the current local time is in Florida and then you'll know for sure your time difference.
