FP+ day-of booking likelihood

I'm a long time reader, first time poster so thank you all for creating such helpful tips! :-)

My wife and I are heading to Disney in early March (Crowd Levels around 6-7). We are park hopping and we'd like to use our 3 FPs across 2 parks in a day. The FP sticky threads mention that we can book FPs in another park right after we scan our first FP for the day, however I don't know how likely those rides will still have a FP available the same day.

Are there any existing tables/charts that might show the history of day-of FP availability? Something that would say that, for example, Soarin FPs typically "sell out" around 10 AM that day (or that they sell out a week earlier!).

I don't know of any resources like that. I have successfully booked 2 FP for the first park and then booked one for the second park after scanning FP #1, so can verify that it does work.

I believe FOP at AK would be very difficult, but I have seen a few reports of people getting it same day after refreshing their apps a lot. Soarin will be hard to get also, but could happen. We successfully got 7DMT at MK as a 6th FP in October during a busy time, when none had been available earlier. Best advice is keep checking what's available whenever you have a minute - in line, while eating, in the restroom, etc

Touringplans.com does have a FP availability chart but I’m not sure which party size is involved in the calculations.

Yesterday, AK had huge crowds and by park opening, the only FPs available were Bug’s Life and Whirl. By the afternoon, only Bug’s life was available and I was checking for a party of 1.

Today at Epcot, prior to park opening IllumiNations still had availability and while I was checking for a party of 1, Test Track popped up for 7:00p.

You’d have more choices if you plan on MK as your second park of the day.
 
From the FP FAQ Availability post:
- Success at getting FPs depends primarily on two factors: the size of the group and how often one is willing to “refresh” the available FP list for that attraction. Constant refreshing, patience, and persistence can result in getting even the most difficult FPs as late as day-of.
 

Today at AK - refreshing got our party of 4 FP+ for Safari at 10:45, Navi River Journey at 11:20, and Everest at 1:45. We went in with FP for FOP at 8:25, FOtLK at 9:30, and Nemo at 10:30. Modified with refresh to get Safari when we got done with FOP and then refreshed after each ride.
 
As Hiro said, touring plans has the information you are looking for. That said... if you spend enough time on MDE, you can find a same day FP for just about anything (including FOP) (for a party of ~4-5 or less). Keep in mind that you might need to spend an hour rapidly refreshing over and over, but the method does work.
