FP+ at Epcot with Rider Swap

We're doing 2 days at Epcot. Mum, Dad, kids 11&13 and toddler too small to ride. First time visit.
Using Rider Swap we can either:
Option 1
Day 1- big kids both ride Soarin with dad and then both ride it again with mum.
Day 2 - same deal but for Test Track.
Option 2
Day 1 - 1 child rides Soarin with dad and other child rides it with Mum. (2FP's used). 1 child rides Test Track with dad and the other child with mum (remaining 2 tier 1 FP's used)
Day 2 - Repeat Day 1 if we want.

Without knowing the rides I'm worried they might not be exciting enough for them to be keen to ride twice and I'll be riding alone.
