Four night stay - I WILL get T&T, right?

If we arrive on Thursday and depart on Monday, wouldn't Sunday be our "fourth day" under DVC rules so we would get trash and towel service? If so, I will probably request that it be done on Saturday, but was trying to get straight in my head that we are entitled to it during this stay!

Correct. Thursday is Day #1 in your counting.

Usually when I have stayed for four nights, my trash/towel day is on morning #3 (if arriving Thursday evening, my trash/towel has been on Saturday morning).
