Some key tips:

Keep your crust moving on the grill so it doesn’t char;

Be sure your cheese (besides mozzarella, I love using soft cheeses like taleggio and bel paese) is grated, as slices don’t melt well;

Your toppings should be sliced on the thinner side; and

If you’re doing something like mushrooms or peppers that require more cooking time, it’s best to have those cooked beforehand. Buon appetito

Grilled pizza dough recipe

Fornino Park Slope and Fornino Williamsburg

Makes 6 pieces*

Ingredients:

1 package of active yeast

1 cup whole wheat flour

2 cups high-gluten flour

1 cup all-purpose flour

2 tsps sea salt

2 tsps honey

2 tsps olive oil

1 ½ cups lukewarm water

Procedure:

In the bowl of a mixer fitted with a dough hook, stir the yeast, honey and oil into the warm water until it dissolves. Add the flour, give it a few seconds, then let it sit for five minutes.

Add the salt, mix well for one minute, and let rest a few minutes. Knead for approximately 10 minutes, or until dough is smooth and elastic. For first rising, shape dough into ball in a mixing bowl and cover with damp cloth. Let rise until it has doubled (at least) in size.

Punch dough down and cut into six pieces. Form each piece into a ball and let rise for two to four hours.

To use:

Roll dough onto an oiled sheet pan into an approximate 12-inch circle. (Dough will be thin and nearly see-through.)

Heat grill to 400 F. Grill one side of the crust until desired crispness, about two and half minutes. Flip.

Add desired toppings to the now-cooked side of the crust. (You can take the pie off the grill to do this if you don’t like working over the heat.)

Continue cooking until cheese melts and toppings set, about two and half minutes.**

* You can grill one side of your pizza crusts, wrap them well and freeze them for up to two weeks.

**To help melt cheese and set toppings, you can close the lid to your grill or place a large metal mixing bowl over the pie.

we grill pizza on the grill allthe time. I use a cast iron pan made by Camp Chef and Lodge also makes one too. I follow just about the same recipe except cooking on a pan instead of over direct heat.
 
I need to try this. We make pizza every week, and while I change up the crust and toppings, it still gets a little predictable. Thanks for posting!
 
Interesting ... eons ago ... almost 30 yrs for my going away party at a duty station in San Diego we went to a place that served "DEEP FRIED" pizzas. Actually they weren't that greasy and fairly good. However, the best was during one of the Boy Scout father/son Memorial Day canoe trips on the Shenadoah River one year my youngest and I made pizzas using Boboli crusts in one of the collapsable coleman ovens circa 1970 on a circa 1970 coleman white gas stove. We got a lot of looks from the dads and sons that were waiting on their tin foil hamburger or chicken in the coals dinners to finish. Now I will say I have done a lot of those so this was just to be different and unusual.

Now that I'm thinking about it ... it's funny in light of the current egg recall thing is back in the early 60's as a Boy Scout on a weekend hike/campout many of us would take one or two eggs and pack them in towels/wash clothes and put them inside our mess kits after removing some of the inside stuff and carry them that way to use for the next day. That could be anywhere from 12 to 36 hrs w/o refrigeration and I can never remember anyone getting sick from this now highly deemed "DANGEROUS" practice.

I make something simpler. I use flour tortillas put it on the grill for a minute then flip it and put bbq sauce, cheese, onions and chicken on it and cook it for another minute. Really quick and easy to make.

Along these lines... pita bread (whole, not split open) or naan work really well too and give you a little thicker crust. :thumbsup2

One of favorites for pizza in the trailer are English Muffin pizzas. We have some Italian hot/mild sausage fried up and frozen and open a can of Contidina or Ragu Pizza sauce and cheese and bake. Actually is quite tasty.
