my own. I got an old fashioned ice cream maker (the kind you put the ice and the salt in, instead of cranking I got the electric one). I got an ice cream recipe book to go along with it. I think there is over 300 ice cream recipes in it.
I tried the Fudge Ice Cream - Dark and Super Rich!
Just what I was in the mood for, but I wasn't expecting much of a result. To my surprise yum, yum yummy. What a delicious treat and there's nothing in there that I'm not supposed to have!
Unsweetened chocloate squares, butter, splenda (instead of sugar) 1/2 & 1/2, whipping cream, eggs, vanilla. I just omited the corn syrup. I supposed I could put the DeVince Syrup in but I haven't found it around here yet.
If anyone is feeling like making their own, it's so much better. I however will have to eat quite a bit of ice cream over the years to make up for the expense of the machine/book.......LOL
I'm up to the challenge!
 
Oh my! That sounds wonderful! Can you post the recipe you used??? (and include the amount of syrup we would need to use!)

Wow congrats! Don't you love when you figure out a way to come up with a substitute for something you love. I sure wish I would eat splenda, but I just don't like the taste of artificial sweetners.

I wonder if I could come up with one for weight watchers that was low in points using real sugar. The nice thing is that you are using fresh ingredients and no additives that the ice cream makers use.

Melanie...I don't see why you couldn't use milk in place of all that cream and then the regular sugar (which I agree tastes best) along with the corn syrup. I like ice milk, it just has too many carbs.

Yes, there are several I'll post them up top with the recipes.
I'll just type them as they are in the book and you can make the substitutions for syrup and sugar!
Do you have an ice cream maker?
 
Would it work with low-fat yoghurt for those of us not on Atkins?

I do have an ice cream maker- bought it a couple of months ago for this very reason- but I didn't like the recipes it had in the box. I'm hoping that yours will be better! I bought an electric one- should've gotten the old fashioned kind though.... I could've used that for my daily excercise! :p ;) :rolleyes:

Yes, the book lists many flavors of yogurt...
Avocado, Banana-Orange, Blueberry-Orange, Cramy Strawberry, Frozen Apple, Frozen Apricot-Pinapple, Frozen Strawberry, Golden Glow, Grape, Italian Style, mandarin-Tangarine, mango-Coconut, Orange-Honey, Orange-Pinapple,PeachyOrange, Rasberry Creme, Sun-Date.....

Karyn I'm not sure of the amount of syrup to use,I omitted it because I didn't have any.
Maybe someone else that has used them can help you out with that.
I plan to go to Marshalls to see if I can get some sugar free syrups thanks for the tip Auntie Bon!
 
Mmmmmmm. My mouth is watering.

I printed off a recipe for lo carb ice cream w/out the ice cream maker. I haven't tried it yet. I will post it on the recipe board after I try it if it's any good. :p
 
My Mint Chocolate Chip Ice Cream recipe (Page 3 of the Low Carb Recipes post) uses DaVinci syrup as a sweetner... it may give you some ideas on how to incorporate it.

There's also a recipe for Vanilla on page 5
 
Dizneegirl- where did you buy the lecithin and xanthum gum? ANd what the heck is xylitol??? And please- where do you get that???
 
I was wondering the same, I've never seen those ingredients in the grocery store?
 
I buy lecithin, glycerin and xanthan gum at a local health food store.

Lecithin comes either in liquid, granules or capsules. You want the liquid or granules.

Glycerin I find in with the soap-making supplies at the health food store. The brand I buy is Frontier. If you buy it somewhere like that, you want to make sure you buy food grade (be sure it does NOT say "for external use only"). Wilton makes a glycerin for cake decorating.

Xanthan gum is a great thickening agent to have on hand for low-carb baking, cooking, etc. You can use it in place of cornstarch or flour for thickening stews, gravies, etc. A little goes a long way. It works a lot like guar gum... I prefer xanthan gum. It also works in baked goods to give a better rise and texture. Bob's Red Mill has a xanthan gum... I can find that in my local Kroger store, along with things like flax meal and oat flour. Many health food stores carry it as well. It's a little expensive (about $10-12 for 6-8 oz.), but you only use it about 1/4 - 1/2 teaspoon at a time, so it lasts forever.

Xylitol is a sugar alcohol. It's got a minimal impact on blood sugar, and is one of the sugar alcohols with the least side effects (laxative-wise). It gives baked goods, custards and ice cream a nice bulk and mouth feel... a lot like regular sugar. As it's a low-impact sugar alcohol, you can generally subtract any carb grams it adds. As opposed to those Splenda carbs from the granular Splenda. Erythritol is another good sugar alcohol with extremely minimal effect on blood sugar, and almost no laxative effect. It can be used in place of xylitol. If you want to play with them, I'd look either at your local health food store, or at netrition.com.

Do you NEED them to make good ice cream? No... you can make ice cream with cream, sweetner and flavoring. But they make the ice cream VERY easy to work with... it doesn't stick to the inside of the freezer bowl in the ice cream machine, and they keep the ice cream from becoming rock hard in the freezer. You can pull out left over frozen ice cream and still scoop it. Great stuff.
