We are going next year , oh loves harry potter but hates scary rides
So q is there anyway we can q together and end for me to go on ride and her to go to the end and meet her outside?

Is escape from Gringotts less scary/intense then forbidden journey?

There is always a way to opt-out of a ride at the last minute. If not, they would be liable for a number of reasons, especially on rides with warnings about pregnancy, pre-existing conditions, motion sickness, etc.

While Gringotts is less intense than FJ, at least for me, it is still intense enough that people who hate "scary" rides should avoid it. A good indicator is to examine the restraints needed. There are no overhead restraints on Gringotts, unlike FJ, but your legs are set in place because of the initial drop.

Gringotts is less scary but might be too much. Parent swapat Universal is very nice- everyone waits together and anyone can opt out of riding, not just for being too short. They have waiting areas right off to the side of the loading area. Everyone can experience the cool queues but not ride. The kiddo will need an adult to wait with- Universal doesn't provide supervision (I don't think you were implying that but wanted to cover it).

What exactly is it that he doens't liek for a "Scary ride". is it the drops and stuff or is it the content, like scary images/story?
If it is motion/drops then FJ might be a bit intense but doens't have any real drops on it, msotly just beign turned around on an arm. If you do a google search of the ride vehicles you can get an idea of what it's like. Or search videos of robo-coasters to see hwo the experience can be. (the ride system on FJ is very well hidden from view). Some of the content for the attraction can be a bit scary though. There is parts with dragons, spiders, demntors swooping down at you, and is pretty dark as well.
Gringotts isn't too intense with big drops and things but does have a small drop at the start and a launch, plsu some family style coaster segments. The images are much less scary but still has some moments like a dragon, trolls attacking, and a snake.
If it's a matter of images you could try watching povs online together and see if it looks too scary that way. As for the motions that will jsut be up to judgment.
