We usually go to WDW the last two weeks of September. Last year, there was a soft opening the last Thursday in Sept (and the year before too if I remember correctly).
Like you said, no guarantee, but it has worked this way for us anyway. Fingers crossed it happens again this year too.
We were there in 2009. The soft opening is called a Cast Member Preview, although it's open to everyone. It'll be on Thursday, the day before the F&W opens. The food booths are open and it's a chance to work out any snag s and fix glitches as well as get CMs familiar with working in the booths.
Since the first day of the F&W is a Friday it isn't very busy, especially during the day when the locals are still at work.
I would assume then that the soft opening day wouldn't be too busy either? Last year we arrived the day after the F&W started so we weren't there for the preview.
