Food&Wine preview day timing

We're going to Epcot the day before the official start of F&W, which I read is preview day. We are planning on lunch at Le Cellier and HDD at 8:30. What is the best time to sample some items at F&W that day? I'm going to adjust our lunch ressie around it.

If this is a preview day...booths will be open for the bulk of the day(11:00?)/ night. I graze whenever I choose to. I don't schedule a sit down, because I wouldn't be able to eat all that food at the meal and booths as well. But that's just me. I wouldn't worry about when to eat as you can eat all day, if you like.
