Food i have to use up

Before vacation in four days. We have two kids who will eat breakfast at home (usually eggs and bacon) and take lunches to school. We have most pantry items so this is just the fridge stuff I need to make sure I incorporate this week for meals to make sure it doesn't go to waste. Any ideas or suggestions are greatly appreciated. ::yes::

1 gallon of milk
1 cup heavy cream
6 bananas
4 avocados
Bag of salad greens
Celery
Half a can of pumpkin (might already need to be tossed)
Half a can of diced green chilies
6-8 oz tomato sauce
Half cup chicken stock
8 eggs
Pork chops
Grapes
6 apples
3 limes
Half onion
Red onion
Green onions
Fresh thyme
Broccoli
Half bag of baby carrots
Flavored cream cheese spread
Some other random sliced cheeses and blue cheeses and such.
 
Pretty much everything you listed can be frozen. I say do your best and night before you leave just put what is left in freezer.

And some of it (cheese and cream cheese) will last for a long time so fine to keep in your freezer till you get back.
 
I guess it depends on the ages of the kids, but that supply would me having running to the store for more.

If each kid has 1 egg for breakfast, they're gone. If they want 2, you have to go to the store. But what is the expiration date on them? They may be good until you come back.

8 ounce glass of milk with breakfast and dinner, the milk is gone.

With the cream and chicken broth, and onions I'm seeing some sort of Alfredo dish.

Chiles, greens and avocados, green onions for a dinner salad, maybe with some of the cheese in it for protein.
Pork chops stand lone. Or cook the baby carrots or broccoli as a side.

Fruit for dessert and snacks.
Limes will keep forever.

But the more I look at it, I still see a trip to the store this week because I only see 2 or 3 days of meals there.
 
We have other stuff in the freezer. This is just what's in the fridge that I want to make sure I use. The kids are 5 and 8 so with bacon and toast they will usually eat one hard boiled egg or I scramble three for the two of them. Besides the 8 eggs I have two that are hard boiled already.

6 apples lunches, snacks or just keep them
3 limes Salsa or drinks or just keep them
Half onion
Red onion Whole? Onions shouldn't be stored in the fridge
Green onions Layered dip, salad, top tators
Fresh thyme
Broccoli lunches with dip, casserole with rice, soup with the cream and chicken stock above
Half bag of baby carrots lunches, snacks or add with broccoli in soup or casserole
Flavored cream cheese spread Depends on if its fruity...bagels or veggie...with celery or just on crackers/wheat thins
Some other random sliced cheeses and blue cheeses and such. Cheese can be frozen, just kept if wrapped well, added to casseroles and lunches
 
You can probably use up most of it for meals. All of the fresh veggies can go into a big salad that you can dip into for a few days. If you have any perishables leftover, you can consider giving them to neighbors. My sister just brought me some lettuce and tomatoes before she left on a two-week trip to Europe. My neighbor sometimes brings me a bag of food before her family leaves on vacation. I'm happy to get it and she's happy that it won't go to waste.
 
I don't know if your family will eat them, but we've started making wraps with tortilla wraps. The avocados and cream cheese spread and celery and onion and broccoli would be perfect for these.

Like the others mentioned the rest can be frozen pretty easily. The milk? Just get some cereal. I swear when there is cereal in the house we run out of milk every other day.:rolleyes:

Okay, I see the makings of a pork chop with apple chutney/thyme and roasted broccoli for one dinner and a Mexican taco salad for another (using the avocados, the salad bag, some of the cheeses, the limes, the onions, and the chilis - you could go with beans or eggs or some extra pork done up Mexi style)...I see the makings of 2 different muffins - a cream cheese carrot muffin (think a version of carrot cake) and a pumpkin muffin (both using up some milk and cream)...and I see the makings of a banana smoothie...and I see cream cheese stuffed celery and grapes being put out for snacks...all just off the top of my head:)...

I have experience walking into a house, seeing what HAS to be used up, and running with it - for years, I would visit my mom (she lived alone) and she would have a full fridge of produce and perishables that were about 2 days from perishing, so I'd just run with what she had and cook - made some cool meals (and saved a lot from the trash)...

The old Food TV show, Doorknock Dinners, was one of my favorites and probably inspired me to think about using what I have and how;)...wish they'd bring it back!

The PPs have great ideas. Making a list and seeing what you can combine is definitely the way to go when you're trying to live off of what you have already bought or clean out your fridge.

We usually go to Sam's at the beginning of the month and stock up. In the second half of the month I start taking inventory to see what I have left and what I need to use. I just did that this morning and have the menu for the rest of the month.

You have to start with a good inventory list and know what's expiring when. For example, we were going to have tacos tomorrow until I remembered that my hamburger buns expire Wednesday. So, we'll have hamburgers tomorrow and tacos on Thursday (with chicken casserole on Wednesday so there won't be two days of hamburger based food in a row!).
