Hi again - I think it's great that you've decided to go to HDDR. I know you will love it!!
Here's how it works...
You are asked to arrive one hour before the show starts (I think we got there around 45 minutes early). You wait outside (the Wilderness Lodge grounds are lovely by the way) and they will take your family picture prior to going in. About 20 minutes before the show starts they open the doors and you are seated. They ask you at the door if you are Category 1, 2 or 3 seating (it's on your ticket) and direct you accordingly. And yes, Category 1 is the closest to the stage. Category 2 & 3 are further back and upstairs in the balcony. But really, there are no bad seats, it just depends on how close you want to be to the actual performers and stage.
We were staying on Disney property and took the bus from our resort to MK and then at the entrance you catch a ferry to the Wilderness Lodge. It's a lovely 15-minute boat ride. Then you walk to the WL where HDD is performed.
After you get seated they take your drink orders and the Pioneer Players come out and do an intro. The show is very slap-stick comedy with lots of musical numbers and some hilarious characters. We loved it. Basically, the PP come out between each of the courses. And yes the food is all you can eat and it is served by servers. We found our server to be very attentive and friendly. The only thing we got a refill on was the chicken because my son can eat scary amounts of food!!

but they will refill anything you ask (this INCLUDES beer and wine!) mmmm...refreshments!
The show is done in about an hour and a half...and then they bring in the next group about 10 minutes later after you leave. Oh, and during the meal, your server will show up with your pic that was taken outside and you can buy it...which we did...it's a nice souvenir.
