Food and Wine with Evening EMH strategy

We are doing a 4 day trip with 2 park days in September. We are doing one day at the MK for the Halloween Party and one day at Epcot for the Food and Wine Festival. We were kind of short changed at Epcot last trip (for a variety of reasons) and we would like to make the most out of Epcot by doing an evening EMH on a Tuesday of low attendance with a break during the day. We are thinking about doing Soarin' at rope drop, FPs for the new Anna and Elsa ride, Epcot character spot, and Spaceship Earth. We would ride Test Track single rider either morning or during evening EMH. We then plan do some more of Future World before taking a break and coming back around 3 for World showcase. I have a few questions:

1. Is this doable?
2. Would it be better to ride Test Track early or during EMH (probably right before closing)?
3. Do the food booths stay open later during EMHs?

Any help would be appreciated.
 
It may be doable however i found that even on low attendance days I did not have enough time for both the booths and all of future world in the same day. however if your priority is rides than I think this is manageable.

I found that once the food and wine is underway future world clears out at night closer to illuminations. wait at night for test track single rider to save time. * (EDIT: Sorry missed the info that you were doing single rider :) )
 

I believe it's only a couple countries that has some things open. youll need to confirm closer which but it'll be the ones with bars like Mexico, Germany, etc.
