Food and Wine Festival HELP!

I am going on another WDW trip in November, just from the 7th-11th, during "Jersey Week" and I plan on spending most of my time at the Epcot Food and Wine Festival.

I'm already bummed bc I leave on Saturday and won't be there to enjoy the Party for the Senses bc they only offer it on Saturdays.

I was hoping to get into some other type of event or specialty dinner, (hoping they do the beer tasting dinner in the American Adventure again! My DBF would love it!) but those dates aren't available yet- and my 180+10 window is May 11th. Should I make ADR's now and then cancel a few when I find out what special meals I might be able to book? It's hard to make plans, when I'd like to arrange my plans around the Food and Wine Festival! Does anyone know when the specialty events will be out and when you can book? What do you Food and Wine Festival lovers usually do each year with respect to ADR's? Are you all booking yours now and refining later? Or will you book when you know the shcedule of events? Any advice?

Hmmm, maybe I am wrong, but I think PftS is offered on Tues and Thursdays also? :confused3 I am not sure, I went lat year and went on a Sat night. But I *think* I remeber they were offered during the week, also. If you have the opportunity to go, you really must. We are going back at the end of Oct/beginning of Nov just to experience PftS (oh, and MNSSHP also! ) :banana:
 
I am going to the F&W at Epcot the first week of Oct (and part of the second week). I am hoping that the info will come out soon as I really enjoy the EAT to the BEAT concerts. Maybe by mid-May we should know something.

PFTS is only on Saturdays.
