Food Allergies

I know that you can have it noted on your reservations that you have food allergies and that you are also supposed to tell your server at the restaurant when you arrive and go to order.

My question is what do they do when you have these issues?

For instance, our party of three has two persons with allergies to different food items (and yes they are actual allergies/intolerances). Obviously we wouldn't order something that specifically indicated such an item for the impacted person, but what if it is within a mixed item such as seasonal vegetables or was in a salad? Would the server know to alert us, and what would they do for the meal (such as substitute) if a side item was impacted?

For counter service locations are items pre-mixed or done at the time of order? (i.e. Are the onions and peppers mixed with the chicken for the chicken tacos at Cantina de San Angel?)

For restaurants that serve seafood as well as other items, do they suggest that you not eat there if you cannot have shellfish or seafood items, or do they just take special care in the preparation of your food?

And here's a heads up, you'll be asked to fill out a Guest Allergy Form with all the details regarding food intolerance/allergies and if you have reservations you need to fill that out too. You'll then send the completed form back to them.

My husband is allergic to shellfish and mangos. When we eat at a buffet a chef comes out and walks him through the buffet and discusses the dishes and alerts him to anything that has the foods he can't have.
At a TS we mention it to the server and then he orders off the menu and asks or double checks with the server that there are no foods he can't have in the dishes he orders.
Disney is very good with this and they seem to have a great system in place for those with food allergies. They really go above and beyond on this IMO!
