Any advice on flying, what type of carry on-how to make check in easier?
Also carry in search at the parks-any advice? We usually bring our own water bottles is this allowed?
 
I actually have no advice for you, but I would suggest you post this on the Transportation board, they might be able to help you better.

Nancy, they still allow you to bring in your own water bottles to all Disney parks. The only difference now is that all bags, backpacks, etc. are searched prior to entering the parks.

As for airline carry-ons, just be sure not to carry anything remotely sharp (nail files, scissors, etc.) and pack lightly in your carry-on in case it is subject to a random search. Your airline website should be able to tell you more about any restrictions.

I'm sure it varies upon airport and airlines, but we just came back from McCarran (Vegas) on Aloha Airlines (a local airline here in Hawaii), and we noticed that they hand checked carryons for those who didn't check in any luggage and just packed everything in a rolly-bag. We carried on backpacks and were not searched.

We only carried fanny packs and a camera bag to the parks and didn't have any problems.
 

We carried on a backpack from Seattle to LAX. I would suggest putting anything metal in your carry-on through the X-ray machine (including loose change, wallet, watch, belt, etc.). LAX is very thorough now and they even had me pull all of my credit cards out of my wallet when I went through the secondary screening.

Disneyland - a simple visual check of bags.
Knott's - We went to the Halloween Haunt, so they had heightened security anyway. Wand and visual bag searches.
Magic Mountain - Metal detectors and visual bag searches.
Sea World - Major bag searches including rifling through people's wallets. No metal detectors or wands.

We felt very safe everywhere we went. The security presence at Disneyland was very apparent, yet in noway obtrusive. The officers on Mainstreet were dressed as keystone cops, so even the uniformed security blended right in.
