We're taking off from a local Pa. airport at 8:20 am on NY day, landing @ MCO at 12:21 pm. Should I expect any difference in traffic, crowds, lines at the Alamo counter, etc. as opposed to any other Sat.? My guess is that if anything, things will be slower than usual on that particular morning, but I've never flown on any holiday. Any advice from some experienced Road Warrior?

1/1 is slower than an avg. day, but not as slow as Xmas, T-Giving and Easter. Lots of people do plans for NYE, but not as many for 1/1. It will probably be a bit slower this year than normal, as it is a Saturday, so most folks don't have to be back at work the next day as they normally would.
