I wonder if Disney is experiencing the same problems filling positions as the rest of the country due to COVID? Plus, I'm guessing staff at signature restaurants may need different training/expertise than those at other dining locations. Thoughts?

Could be. I've also heard that some specialty ingredients are difficult to source these days. And everything always comes down to profitablity ... if they can't do the same number of "covers"/plates a night due to distancing requirements then it may not make sense for them to come back yet. Whenever they do reopen, I will be amongst the first in line and promise to order and drink a lot. Specific to Flying Fish, someone mentioned in another thread recently that the chef from Flying Fish is currently over at Trattoria al Forno and has been tweaking the menu there a bit.
