1) Snapper is getting more expensive.
2) Disney wants profit.
3) Look for this more-and-more across the restaurant spectrum.
4) With DDP, eateries can't change prices to reflect increased costs, so they are getting cheaper entrees.
5) Prior to DDP, if costs went up, they would just increase the price, like ANY OTHER restaurant.

Kind of disappointed the FF signature dishes are gone as well. now it is like... the boardwalk version of Tiffin
For the most part when I see sustainable fish on a menu I think cheap. From Snapper to sustainable fish is, I'm sure a step down. I doubt the price dropped much.I loved the potato encrusted snapper too, but the sustainable fish with a potato beurre blanc reminds me of a deconstructed version of that. It looks yummy!
for someone like me who does not visit the parks all that often and doesn't go to many signatures when I do (2 planned, last trip was 2 years ago) it is probably fine. But FF seems to have lost the "signature" part of it's "signature" status. I guess just a little bummed that they couldn't keep what they are known for and shake up the rest of the menu. Also it seems that whoever theirr food service is is delivering the same ingredients to every signature nowThis. My initial thought was it's like a safer, more seafood focused, more boring California Grill without the view now.
If you are still craving the potato encrusted snapper, check out Monsier Paul. They have the entree listed.Reservation open 7/29 for the re-opening of Flying Fish on August 3rd. From the menu posted they no longer offer the snapper. That was a favorite.

I actually noticed the same items in California grill jiko artist point... I think I basically all the signatures have similar proteins and maybe a different interpretation by the chef?
That was pretty much my favorite steak on property. Sigh.And that Char Crusted NY Strip appears to be missing in action as well--
IT wasn't really "spiced" in any sense of the word, just char grilled sort of 'Pittsburgh Style".
Doubt they would try that with the new filet---

Gah! I was so excited about Flying Fish returning. . .and now, I'm pretty underwhelmed by the new menu. The snapper, the sushi appetizer, the calamari, the NY strip, the tomato/mozerella salad, even that mac & cheese. . .not ONE of my faves returning. Sigh. Really glad I booked a last meal here right before the refurb.
I'm thinking this is indeed the full menu. At least the one they intend to open the restaurant with. I'm sure it will be tweaked as time goes on and the chef sees what sells and what doesn't.
