We were planning on purchasing season passes in February, but may not use them until March, are we able to pay/pick up when we are there in February but not have the first use date until our March trip or would the year start the day we purchase? Or is it the date of first use?

You would need to buy an AP voucher and then trade that for a live AP at a ticket booth or guest relations on the trip when you were ready to enter a park.

You can buy vouchers from home.

A way to "buy ahead" would be to purchase a regular ticket that is close to (but less than) the cost of a FL Seasonal AP, but just hold onto it, unused.
Then, when you are ready to begin your seasonal AP, upgrade your unused ticket to the Seasonal AP at a ticket booth or guest relations and enter the park.
