Sorry if I missed how long you would be staying in Paris but you can check out www.vacationinparis.com for apartments. They are a US based company with a great reputation. We have rented with them for a week in July 2011.
Depending on your attachment to Disney I would suggest making it a daytrip if you choose to only visit Magic Kingdom. If you have never been to Europe before don't short change the experience of Paris' history, food, art, etc.
