If you're doing 7DMT twice, you have to consider 5-10 minutes to get through the line. Erring on the side of caution, if it's 10 minutes per, that's 20 minutes on line, and the ride is short, couple of minutes, so let's say 20-30 minutes before you're completely out of there. That puts you at around 11:15. It'll take a good bit of time to walk all the way to Pecos Bill. You're best bet, I think would be to go through the castle, make a right and cut through Adventureland. Probably put you at Pecos Bill somewhere between 11:30-11:40, depending on how fast you walk and how crowded it is. You'll be hitting Pecos Bill right around the beginning of the lunch rush, so figure 15-20 minutes to get your food (have someone find a table while you wait as they can be very hard to come by), so, we're looking at around noon by the time you sit down to eat. Now, if your fFP for SM is from 12:30-1:30, sit down and enjoy your lunch, as the entrance to SM is a quick walk from Pecos Bill. If it's from 11:30-12:30, you may be cutting it a bit close, but you can still make it. If your FP is for 12:30-1:30, and you get there say around 12:45-1, you will be in and out I'd say the latest 1:30. So... depending on where and what time your ADR is, and where you are staying, you should have a decent amount of downtime.
