I am going to Disneyland with my girlfriend in March and it will be her first time ever! I have been many times but usually focus on the attractions because that is what I love to do. Are there anythings that she needs to see while we are there that might be slightly off the beaten path, specifically my path involving mostly attractions. Any and all tips would be great. Thanks a lot!
 
Check out The Cove bar in CA near California Screaming. They have GREAT food and really fun drinks (including non-alcoholic). It's honestly one of my favorite places at DLR, and has a great view of the park.
 
It is hard to say as we have no knowledge of her personality.

Some to consider:
Snow White's wishing well just outside the castle (to east of main drawbridge).
Shops in New Orleans Square.
Walk through Radiator Springs after dark.
Just sit and watch the videos in Animation lobby.

The tiki bar on the ground of the dl hotel is good fun if you are drinkers. The sweets shop by the Winnie the pooh is a great place also. The frozen show at dca is amazing but it will eat a lot of your day. The its tough to be a bug show is also a good non ride choice that will get you laughing
