I would stick to your current plan and, if you find you want more time in AK, simply upgrade your ticket and add a day.
This is my idea too since OP has 10 days, even adding AK at the last minute when you get used to the FP system you could do another AK day on the fly if you want.
 
We would do more park days but I’m also trying to fit in some golf and pool days
I wouldn't do more than 1 pool day, but that's just my opinion. We're from the north and still get cold at WDW during the winter months, and it's extremely unpredictable weather.

I'm happy to see you got your FP though, we were all concerned for you! :)
 
Most people can get everything in Animal Kingdom done in one day. I keep an excel sheet with the list of rides and shows offered in each park. Magic Kingdom has somewhere around 30 rides and shows, each of the other 3 parks has between 12-15. So it’s a lot harder to get it all in one day at Magic Kingdom. If your kids are small, there are more rides that are not thrill rides at which Kingdom as well.

Most rides at animal kingdom will require rider swap if your kids are vertically challenged. Plenty of shows, but you can only force young kids to sit through so much of that. I would vote for MK , but change it if you need to as time approaches.
 
All plans were made well in advance. Was just debating if i made the wrong choice to doing MK twice opposed to animal kingdom since Disneyland is so similar to MK. But we already have fast passes that were made the second I was able to
Honestly, I'm glad to hear your report. Going reverse, being used to WDW, it felt soooo weird not having to plan so much when we were getting ready to head out West.
 
Yeah we are doing 10 days and 5 are at the parks so we have a good amount of rest/pool/shopping days. Appreciate the advice
I'm guessing you're aware that adding additional days is about $10 a day/person so even if you plan do to some shopping, golf, pool days, etc. you may find it worth while to add a few days to your tickets to offer you either the opportunity to eat in the parks (Epcot has tons of great choices!) or, spread out your park time so that you're not having to go so hard on your 5 park days. We find getting tickets for more days far less stressful than trying to get 'everything' done in one day.

I didn’t know about that. I will look in to it for sure. It might be different for me because I have the military passes but I really appreciate the advice

Yes. Adding ticket days past 5 are much cheaper than the first 5, and those 3 FPs each extra day will make life sooo much easier.

You don't even need to spend those whole days in the park. Still plan a relaxed day and maybe just pop in to use the 3 FPs and catch the fireworks or whatever.
 
I would definitely stick to your plan of MK for 2 days. With young kids, there will be PLENTY to do there between rides, meet & greets, etc. AK is great, but definitely can be done in one day. Have a great trip!
 
Just wanted to add- MK and AK are both great parks to visit twice with young kids. MK is obvious, but kids also love watching the animals at AK. If you're able to expand your military ticket for relatively cheap, then 2 days at both parks gets my vote.
