First time at WDW need advice on FP+/Itinerary/SWW

What was supposed to be a quick weekend at Universal for Mardi Gras (March) to celebrate my 5yo son's bday ended up turning into a weeklong trip in May (5 days @WDW). We were trying to wait another year until taking our kids to WDW (5yo boy & 2yo girl) but everything lined up and we figured we'd just go for it this year. I am still learning about FP+ and ADR but was looking for some advice as my FP+ opens up soon. We arrive at POR on Tuesday 5/12 in the afternoon and were looking at this schedule:

Tues PM - MK (possibly using FP+ on Wishes or parade, 7DMT, BTM) just to get a feel of that park OR
Epcot to see Illuminations & Soaring and eat at the Flower festival
Wed - EMH at DHS, sign up for JTA then head to 8:20 ADR Star Wars Galactic Breakfast. Probably do Star
Tours, JTA, and Disney Junior Live before heading to Animal Kingdom for the afternoon (using FP+ there I guess) and returning to DHS for our ADR Jedi Mickey Fantasmic Package.
Thur - MK all day, BOG lunch ADR, then either Wishes or Illuminations (whatever we don't do Tues)
Fri - Star Wars weekend stuff (Chewie, shows, shopping) maybe Epcot later
Sat - Star Wars weekend stuff, then MK later for Cinderella Royal Table 9:30pm ADR

We may do DTD as time permits, but it's not a priority. Also A&E meet & greet would just be a FP+ for 1 parent since my 2yo doesn't need it and my son isn't into it. I'm mainly seeking advice on which nights I should see the fireworks/parade at MK or Epcot and whether I should use a FP on it when we arrive at the park late on our first day. Any advice/critiques? TIA
