For a couple-only trip, I'd go to the Kona Island Sushi Bar at the Polynesian Resort for sushi and cocktails/sake (I believe you mentioned that your wife likes that!) No reservations are needed, so you wouldn't have to worry about your arrival time and the possibility of losing your credit card guarantee. You also wouldn't need park passes, so you'd save a little $$$ also.
You two could then watch the Wishes fireworks from the Poly beach (very romantic!) and/or visit the monorail resorts and shop. Sounds like it would be a lovely evening!
