First family trip in July, Fastpass help

Hi everyone. My family is going to Disney for the first time July 11-19th. We are a group of 4 adults and 3 kids (girls ages 4 and 7, and my son who is 5). We are staying offsite and have rented a van. Below are the days we will be at the parks
June 12- Magic Kingdom
June 13th- Animal Kingdom
June 14th- Universal
15th- DTD/ T-Rex Dinner
16th- Hollywood Studios
17th- Beach day
18th- Epcot

Does this look ok? Would 3 park days in a row be too much for the kids? We want to do rope drop on the Disney park days. I am also starting to book our Fastpasses but not sure what to choose? Any recommendations for each park? Kiddie rides preferred. I was going to do Peter Pan at 9:25, but if we make it to Rope Drop is this necessary? Would we be able to do the most popular rides in the morning and leave the fast passes for something else? We have an appointment for the Pirates League at 12:30. So should we do Fantasy Land in the morning, first Fast pass at 11:35, and then other rides after Pirate League?

When my kids were 6 and 10 on our first trip we went to the parks 3 days in a row and let me tell you that 4th day they could not get up they were so exhausted we had to sleep in and we used that day to walk around Disney Springs. Personally I would get fast passes even if you do rope drop. Now my kids are now 17 and 21 but at the time splash mountain, dumbo, buzz lightyear, big thunder mountain. Animal kingdom was the Safari and its a bugs life. Hollywood studios for them was nothing they really wanted to do because my youngest was to scared. Epcot soarin was a 2 hour wait.

I would at least show the kids the options they have a take their top ones and try to get fast passes. We did have a wonderful time though but now I can't get my 17 year old to go anymore.
 
I would try to include toy story at Hollywood studios, safari at animal kingdom, Peter Pan at magic kingdom, frozen ride at Epcot. Some of the character meet and greets might be good too depending on who your kids would like to meet. I usually try to do my first fast pass at least 1 1/2 to 2 hours after the park opens since lines are not as long in the mornings.
 
I like to schedule my FP+ for earlier in the day so by the time I'm done my 3rd one, I have more options for a 4th FP+. That being we're not rope droppers.
I would also schedule FP+ so you're not running back and forth all day, for example, I wouldn't do Priates, Space Mountain, and the BTMRR. I would try to keep them closer geographically. Saves time and energy!
